Garlic Butter Seared Scallops 蒜香煎带子

Ingredients 材料 :

  • 500g scallop / 500克 带子
  • salt and pepper to taste / 适量 盐和胡椒
  • 1/4 teaspoon paprika / 1/4 茶匙 辣椒粉
  • 4 tablespoons unsalted butter / 4汤匙 无盐黄油
  • 5 cloves garlic, minced / 5瓣 大蒜,切碎
  • 1/3 cup white wine / 1/3 杯 白酒
  • 2 tablespoons chopped parsley / 2汤匙 欧芹碎
  • lemon slices for garnish / 柠檬片 摆盘用

Instruction 做法 :

  1. Pat dry the scallops with paper towel after thawed.
  2. Season scallops on all side with salt, pepper and paprika.
  3. Set a large frying pan over high heat and add 2 tablespoons butter, cook till sizzling.
  4. Add the scallops in without crowding.
  5. Cook the scallops for 2mins, or till browned. Do not move them around.
  6. Flip over the scallops, lower heat to medium-high, and continue to cook for 2minutes, or till bottom is golden brown.
  7. Remove scallops from pan and set aside.
  8. Melt the remaining butter in the pan. Stir in garlic, cook for 1 min, stir frequently. 
  9. Add wine and cook for 2 mins.
  10. Squeeze lemon juice into the skillet, stir and taste sauce for seasoning.
  11. Return scallops to the pan and spoon sauce over it.
  12. Garnish with parsley and lemon slices.
  13. Serve


  1. 解冻后,用厨房纸将带子拍干。
  2. 撒上盐,胡椒以及辣椒非调味。
  3. 准备平底锅,放入2汤匙无盐黄油,烧开。
  4. 将带子平铺在锅里。
  5. 稍煎2分钟至微微上色,无需翻面。
  6. 之后将带子翻面,转至中小火,继续香煎2分钟或底部金黄。
  7. 将带子装盘备用。
  8. 放入剩余的无盐黄油,加入大蒜翻炒1分钟。
  9. 加入白酒焖煮2分钟。
  10. 再来挤上柠檬汁搅拌,可随喜好调味。
  11. 将带子倒入锅中,用汤匙讲酱汁浇在带子上。
  12. 出锅,用撒上欧芹已经柠檬片摆盘即可。
  13. 趁热享用。
